At Coffee Parlor | COPA, scratch-made food is a coastal culture that connects and thrives. Chef Josh Knight’s Long Beach story began with his California mother’s Latin influences—farmers markets, BBQs, surfing—and a Southern father lost young. A near-fatal accident at 14 sparked independence, leading him to cook at 15 for himself and his sisters, rejecting fast food for quality ingredients. Over 26 years, Josh became a chef, pit master, pastry chef, and barista, honing a philosophy—good flour, healthy gut, longer life—through bold experiments and honest mistakes, despite losing a kidney at 32. Inspired by Long Beach’s streets, car culture, and diverse flavors, he founded Modern Patina Group in 2018, launching Coffee Parlor (COPA), Smugglers Port BBQ, and Dalton’s Bakery. COPA, a scratch-based cafe, blends vibrant, local dishes with single-origin coffee to create a sustainable space where every plate invites Long Beach to savor joy, trust, and belonging.
